A tasty salad for a summer lunch. Can easily be doubled for large family gatherings.

Recipe Ingredients for Southwest Salad

15 oz. whole kernel corn, drained
15 oz. black beans, rinsed and drained
15 oz. diced tomatoes, drained
3 oz. sliced black olives, drained
3 oz. diced green chilies, drained
1/2 cup chopped red onion
1/2 cup chopped green pepper
1/2 cup sliced celery
2 tablespoons sugar (or Splenda)
1/4 cup red wine vinegar
1/4 cup vegetable oil
1 salt and pepper to taste

Recipe Directions for Southwest Salad

  1. Combine vegetables in large glass bowl.

  2. Combine remaining ingredients in a small bowl; stir to dissolve sugar.

  3. Pour over vegetables.

  4. Cover tightly and refrigerate at least one hour before serving.
