Breakfast, lunch, or dinner, this is a quick and easy recipe.

Recipe Ingredients for Southwest Quiche

1 T Olive Oil
1/2 c Onion
1/2 c Beans, black
1/2 c Corn, Canned
1/3 c colby jack cheese, shredded
6 egg whites
1/3 c milk, skim
1/2 t salt
1/2 t pepper
1 c spinach, chopped

Recipe Directions for Southwest Quiche

  1. In small oven proof skillet (I use a 5 inch cast Iron pan) saute first 4 ingredients with mexican spices.

  2. Whisk remaining and add to pan.

  3. Cook on stove top 2-3 min on med heat, then place pan in oven on broil 3-5 min or when eggs are firm through-out.
