Sunny Anderson Food Network Southwest Quesadilla

Recipe Ingredients for Southwest Quesadilla

2 tablespoons olive oil
1 small red pepper
1/2 red onion
1 cup fresh corn kernels
2 teaspoons red pepper flakes
1/2 cup fresh cilantro leaves
6 medium flour tortillas
12 ounces refried beans
8 ounces shredded pepper jack cheese

Recipe Directions for Southwest Quesadilla

In large skillet heat oil over medium heat. Saute red pepper and onion until soft. Add corn, red pepper flakes and cumin. Remove from heat and add cilantro. Divide beans and spread on two large tortillas. Divide vegetable mixture among both tortialls. Divide cheese and spread on vegetable mixture. Top with two torillas. Bake at 400 about 10 minutes.
