Recipe Ingredients for Southwest Pinto Bean Stew

5 pounds Pinto beans
108 oz Tomato Puree
1/2 cup of chili pepper
5 tbs of Cumin
3 tbs Hot Pepper
5 Onions

Recipe Directions for Southwest Pinto Bean Stew

Soak beans beans overnight. Drain soak water and refill. Bring to rolling boil for 15 minutes and then simmer one hours until beans soft. Drain water then add puree and spices and one cups of fresh water. Simmer (lowest setting) another two hours and let pot cool down another two hours. Makes 12 quarts, 48 cups.
