Recipe Ingredients for Southwest Pasta Salad

8 ounce small shell pasta, uncooked
1 c frozen corn
1 can (15 ounces) beans, rinsed and drained
1 yellow pepper, chopped
1 c cucumber, chopped
1 c red onion, chopped
5 1/2 ounces green olive
3 tbsp lemon juice
2 tsp ground cumin
2 tsp olive oil
1/2 tsp salt
1/2 tsp pepper

Recipe Directions for Southwest Pasta Salad

  1. Cook pasta. When it is almost done, add corn

  2. Drain pasta and rinse with cold water. Put in a large bowl.

  3. Add beans, yellow pepper, cucmber, onion and olives.

  4. In a small bowl mix lemon juice, cumin, olive oil, salt and pepper. Pour over salad and swerve.
