One of my favorite meals: a cheap and easy stew with ground beef and SALSA!

Recipe Ingredients for Southwest Meat & Potato Stew

2 pounds Ground Beef
1 Onion, Chopped
1 cup Water, Divided
3 Potatoes
28 oz. Diced Tomatoes, With Liquid
1 cup Salsa
16 ounces, weight Frozen Corn
1 teaspoon Salt
1 teaspoon Ground Cumin
1/2 teaspoons Garlic Powder
1/2 teaspoons Pepper
2 tablespoons Flour

Recipe Directions for Southwest Meat & Potato Stew

  1. In a Dutch oven or large kettle, brown beef and onion; drain. Add 3/4 cup water and all remaining ingredients except flour.

  2. Bring to a boil; reduce heat. Cover and simmer for 1 1/2 hours.

  3. Combine remaining water and flour and stir into the stew. Cook and stir until boiling and slightly thickened.
