Chicken-chili with black beans and corn

Recipe Ingredients for Southwest Grilled Chicken-Chili

3/4 lb. chicken thighs
3/4 cup chopped green sweet pepper
3/4 cup chopped onion
1 tsp. bottled minced garlic
1 tbsp. cooking oil
28 oz. diced tomatoes, undrained
15 oz. black beans
1 cup corn
6 oz. beer
1 tbsp. red wine vinegar
1 tbsp. chili powder
1 tsp. dried oregano, crushed
1 tsp. ground cumin
1/4 tsp. ground black pepper
1/2 tsp crushed red pepper
1/2 tsp sage
1/4 tsp. bottled hot sauce
1/2 cup shredded colby jack cheese

Recipe Directions for Southwest Grilled Chicken-Chili

  1. Grill the chicken(can season w/ salt, pepper, paprika, garlic) then shred the meat using 2 forks.

  2. In a dutch oven, cook onions, pappers, and garlic in the hot oil until tender.

  3. Toss in the shredded chicken and continue to saute for 2-3 minutes.

  4. Add all remaning ingredients and stir.

  5. Bring to a boil then reduce to a simmer.

  6. Cover and allow to simmer for 20 minutes.

  7. To serve, scoop a 1 1/2 cup serving into a bowl & sprinkle with the shredded cheese.
