Recipe Ingredients for Southwest Egg Salad

2 large eggs
8 egg whites
1/4 c light mayo
1 T. salsa
2 T. cilantro
1 t. green chiles
2 T. chives
0.33 large red bell pepper
1/8 t. salt
1/8 t. pepper

Recipe Directions for Southwest Egg Salad

Hard boil eggs. Shell and discard yolks for 8 of 10 eggs. Mash with fork. Chop cilantro, chives, chiles, and bell pepper. Stir all ingredients together.
