Recipe Ingredients for Southwest Egg Rolls

2 cups cooked brown rice
1 1/2 cup cooked black beans
1 cup cooked corn
1/4 cup sundried tomatoes
1 chopped green pepper
1 small onion, chopped
1 cup chopped spinach
1 tsp onion powder
1 tsp garlic powder
1 tsp cumin seed
2 tsp chili powder
2 tsp chicken boullion
20 egg roll wrappers

Recipe Directions for Southwest Egg Rolls

  1. Saute' onion, green pepper, spinach, and sundried tomatoes in nonstick skillet sprayed with cooking spray.

  2. Place all ingredients in a large bowl and mix well.

  3. Place about 2 tablespoons of filling in each wonton wrapper and roll up from one corner, burrito style. I use some flour and water paste to glue the edge.

  4. Place eggrolls in a large skillet with about 1 inch of hot canola oil. Fry on all sides until golden brown. Let cool for a few minutes.

  5. Enjoy!
