Recipe Ingredients for Southwest Crock-Pot Tacos

580 g Chicken Breast
269 g kidney beans
164 g sweet corn
1/4 cup water
1/4 cup canola oil
3 cups Ro*Tel
12 tsp taco season

Recipe Directions for Southwest Crock-Pot Tacos

  1. Add Ingredients to Crock-Pot: So the first thing we're going to do is take the taco seasoning and pour it onto the bottom of the crock-pot and we're going to put the frozen chicken right on top of the taco seasoning, we'll add the pico de gallo, or rotel, right on top of that. Then we're going to pour the olive oil over the top and add the quarter cup of water.

  2. Cover and Cook: This is where you add your optional item here once you have it all loaded up. You're not going to stir it. You're going to put the lid on top of the crock-pot and cook it on low for four and half hours.

  3. Remove Chicken and Shred: At that point we're going to pull the chicken breasts out at the 4.5 hour mark and pull the chicken apart. It should be very moist and stringy at this point, should only take a minute to shred it up. Once you have it shredded you'll put it back in the crock-pot and cook on low for 30 more minutes.

  4. Serve on Flour Tortilla: Then you're done, you can leave it on low while you eat. To serve here I've used a flour tortilla and I'm going to add some cheese. You can add some sour cream or some hot sauce if it needs a little kick and you're done.
