Southwest Crab Bisque Recipe

A light but filling spicy southwest soup. Yummmm. A great party soup in small portions with a big mixed salad.

Recipe Ingredients for Southwest Crab Bisque

6 ounces jalapenos
3 ounces onion
4 ounces carrot
3 ounces potato
8 ounces whole kernel corn
4 ounces poblano peppers
10 ounces Rotel tomatoes
12 ounces lump crab meat
6 ounces raw shrimp
6 ounces monterey jack cheese
2/3 c potato flakes
5 c chicken stock
1/2 c half and half
2 c milk
2 T corn oil
1 t salt
1/2 t ground cumin
1 T chili powder
1/2 t ground oregano
1/2 t black pepper

Recipe Directions for Southwest Crab Bisque

  1. Seed peppers and use a food processor to mince them with onion, carrot and potato. (Be careful not to go so far as to puree them!) If you want a really spicy soup, leave a few of the jalapeno seeds in the mix.

  2. Shred cheese and set aside. Rinse, peel, and de-vein shrinp and set aside.

  3. Heat oil in a pan, and saute veggies until tender and just beginning to caramelize.

  4. Add seasonings, Rotel tomatoes, corn and chicken stock and bring to a boil for 10 minutes. Add potato flakes with a whisk to thicken slightly.

  5. Reduce heat to a simmer, and add crab, milk, and half&half and bring heat up to a simmer again. Adjust seasoning to taste and add shredded cheese by small handfuls until it melts and is incorporated in to the soup. Add shrimp and simmer for 3 minutes.

  6. Serve hot with crusty bread.
