Recipe Ingredients for Southwest Couscous Cakes

6.1 oz Couscous
1.5 cup DRAINED Black Beans, Canned
15 oz Whole Kernel Sweet Corn
4.5 oz Diced Green Chilies
2 large Egg, Whole
1 tbsp Butter
0.2 cup Wheat Flour, White, All-purpose, Enriched, Bleached
1 tbsp Coriander Leaf, Dried

Recipe Directions for Southwest Couscous Cakes

  1. prepare couscous according to package directions.

  2. drain and rinse black beans

  3. add beans, corn, chilies, eggs, flour, and cilantro to couscous.

  4. heat olive oil in pan, drop couscous mixture in pan in 1/4 cupfuls

  5. fry on either side until crispy.

  6. Serve with sour cream/greek yogurt and salsa
