This is a very hearty and satisfying meal for days when you're feeling like a bit of Mexican.

Recipe Ingredients for Southwest Chipotle Chicken Breast

25 ounce Boneless Skinless Chicken Breast
1 3/4 cups beans, pink
1/2 cup shredded cheddar cheese
4 tbsp BBQ Sauce, Franks Sweet Heat BBQ
1/2 tsp Kosher or Sea Salt
1/2 tsp fresh ground black pepper
1/4 tsp Ground Chipotle Chile Pepper
1/16 tsp ground cumin
2 small tomatoes, chopped
1 tbsp Fresh Cilantro, chopped
1 tbsp Fresh Parsley, chopped
1 small red onion, chopped
1 stalk celery, chopped
2 ears corn
1 large zucchini
1 tbsp olive oil
1 teaspoon Lime Juice
1 Cooking Spray

Recipe Directions for Southwest Chipotle Chicken Breast

  1. Fire up the grill

  2. Put ears of corn into pan with water over high heat on burner. Once it comes to a boil, turn off heat.

  3. In skillet, saute onion and celery over medium heat until the onion starts to become translucent.

  4. Cut zucchini into large spears and spray with olive oil or any other cooking spray and sprinkle with salt and fresh ground pepper.

  5. Coat chicken breasts with the Franks Wing sauce.

  6. Brush boiled corn with the Franks Wing sauce.

  7. Grill the chicken, zucchini and corn, watching carefully.

  8. While food is grilling return to the pan with onion and celery and add the red beans and seasoning to the pan and bring back up to medium heat.

  9. Take corn and zucchini from the grill.

  10. Dice the zucchini into bite size pieces and remove the corn from the cob.

  11. Add the corn, zucchini, chopped tomato and fresh spices to the mixture and cook for another few minutes.

  12. Get chicken from the grill and serve on top of the bean mixture.

  13. Squeeze the lime juice onto the chicken and garnish with the cheddar cheese.
