Quick, spicy Southwest style chicken wraps. Recipe does not include calories for tortilla. Must be added separately to food log.

Recipe Ingredients for Southwest Chicken Tortillas

32 oz chicken breast, skinless, boneless, cubed
19 oz black beans
12 oz corn
10 oz onion
4 oz pepper, red
1/2 oz pepper, jalapeno
10 oz salsa, Pace Chunky
8 oz mozzarella cheese, shredded

Recipe Directions for Southwest Chicken Tortillas

  1. Sautee onions and peppers. Set Aside.

  2. In the same pan, brown the cubed chicken breasts.

  3. Add the onions back to the pan along with the well drained beans and corn.

  4. Add the Pace Chunky salsa.

  5. Simmer until chicken cooked through.

  6. Serve in whole wheat wrap with shredded mozzarella. Add chopped cilantro if you have some on hand.
