Recipe Ingredients for southwest chicken soup

1 PAM cooking spray
1/3 cup onions, chopped
1/3 cup carrots, chopped
1/3 cup red pepper, chopped
1/4 cup celery, chopped
1/3 cup pinto beans
1/4 cup black beans
10 oz chicken breast, chopped (raw)
8 ounce diced tomatoes
1 dash cayenne pepper
1/8 tsp pepper
1/4 tsp garlic powder
1 cup water
1/4 cup frozen corn

Recipe Directions for southwest chicken soup

  1. Spray cast iron or non-stick pan with PAM Canola Oil. Saute carrots and celery for about 5 minutes on medium heat. Add onions and red pepper, cook another 5 minutes until almost soft and lightly browned.

  2. combine sauteed vegetables with all other ingredients in slow-cooker except frozen corn. I use leftover frozen beans, or beans that have been soaked overnight.

  3. cook on high for 4 hours, or low 6-8 hours

  4. add in corn during last 10 minutes

  5. season to taste (I add 1/2 vegetable boullion cube at the end)
