Chicken, Spinach, corn and black bean roll-ups with low-fat ranch dip

Recipe Ingredients for Southwest Chicken Roll-Ups

12 ounces cooked chicken breasts
210 g canned black beans
215 g canned corn
113 g green chiles
1/2 cup salsa
1 cup chopped spinach
1 cup shredded 2% cheese
4 flour tortillas
1/4 cup light sour cream
1/2 cup diced tomatoes
11 3/10 g ranch salad dressing mix

Recipe Directions for Southwest Chicken Roll-Ups

  1. diced cooked chicken breasts

  2. use 1/2 can black beans, 1/2 can corn

  3. mix first 7 ingrediants in large bowl or pan

  4. PreHeat oven to 400

  5. microwave or cook on stovetop until warm and mixed

  6. divide equally onto 4 flour tortillas

  7. fold and roll tortillas

  8. place seam side down

  9. bake in oven 12 - 15 minutes; flip 1/2 way through

  10. While baking, combine sour cream and ranch dress mix

  11. Top dip with tomatoes and refrigerate

  12. After baking rolls, allow to cool slightly

  13. Serve each roll with dipping sauce
