Recipe Ingredients for Southwest chicken and rice

159 g brown rice, uncooked
1 cup water
89 g onion
18 g garlic
1 1/2 tbsp Country Crock
300 g chicken breast, skinless, boneless
14 1/2 oz tomato, canned
226 g Black Beans

Recipe Directions for Southwest chicken and rice

  1. Steam brown rice in water.

  2. Saute chopped onion and crushed, diced garlic in Country Crock margarine.

  3. Add chicken, cut in strips, to onions and garlic mix, cook until white.

  4. Add steamed rice, can fire roasted tomatoes, diced and 1 package Old El Paso seasoned black bean in sauce. Simmer until heated through.

  5. Serve.
