Recipe Ingredients for Southwest chicken, rice and beans

1 cup Rice, White, Medium-grain, Cooked
1 cup, chopped or diced Chicken, Breast, Meat Only
1/2 cup Black Beans
2 tsp dry mix Taco Seasoning
1/2 cup Sauce, Ready-to-serve, Salsa
1 cup, shredded Cheddar Cheese

Recipe Directions for Southwest chicken, rice and beans

Cut chicken into bite sized chunks, put 1 cup salsa, 3 cups water, 2 cups rice, black beans, taco seasoning and chicken into pressure cooker. Cook on high pressure for 12 minutes. Reduce pressure naturally, add 1 cup cheese, close lid until melted. Serve with sour cream if desired.
