When cooked with fire roasted canned tomatoes it is a nice rice and meat dish with a southwest flavor.

Recipe Ingredients for Southwest chicken and rice (beanless)

159 g brown rice
1 cup water
14 1/2 oz tomato, canned
112 g chicken breast, skinless
50 g onion
5 g garlic
1/4 tsp chili powder

Recipe Directions for Southwest chicken and rice (beanless)

  1. Steam rice and water for 55 minutes.

  2. Slice chicken in bit size strips and cook in skillet with chopped onion and diced garlic.

  3. Add tomatoes and chili powder. Cover and simmer until rice is done. Add rice to tomato mixture and let sit for 10 or 15 minutes covered.
