Recipe Ingredients for Southwest Chicken

1 tablespoon vegetable oil
400 grams boneless chicken breast or 4 fillets
10 ounce diced tomatoes with green chile peppers
15 ounce black beans, rinsed and drained
8 3/4 ounce whole kernel corn, drained
1 pinch ground cumin

Recipe Directions for Southwest Chicken

  1. In a large skillet, heat oil over medium high heat. Brown chicken breasts on both sides.

  2. Add tomatoes with green chile peppers, beans and corn.

  3. Reduce heat and let simmer for 25 to 30 minutes or until chicken is cooked through and juices run clear.

  4. Add a dash of cumin and serve.
