Southwest Chicken Enchilada Recipe

Low(er)-fat casserole style Enchiladas. The Tostitos band cheese sauce is relatively low fat and lower sodium than other alternatives. This provides a very cheesy flavor without all the bad stuff!

Recipe Ingredients for Southwest Chicken Enchilada

16 oz Boneless, Skinless Chicken Breast
2 cups Southern Style Hash Brown Potatoes
1 c Frozen Yellow Corn
15 oz Can Black Beans
1 Tomato (Fresh, Diced)
1/2 Green Pepper (Diced)
1/2 Onion (Diced)
15 oz Can Enchillada Sauce
8 T Tostitos Salsa Con Queso
8 oz Lowfat Cottage Cheese
2 T Olive Oil
2 T Chopped Garlic
1 t Chili Powder
1 oz Fresh Cilantro
1 fruit) Lime Sliced
8 Flour Tortillas (98% Fat Free)(Medium Soft Taco Size)

Recipe Directions for Southwest Chicken Enchilada

  1. Cut Chicken into thin strips and cook in 1T olive oil over medium heat with garlic and chili powder.

  2. Remove chicken, retain oil and garlic.

  3. Saute, Onion and Green Pepper in 1T olive oil.

  4. Add potatoes and brown.

  5. In large mixing bowl combine, corn, black beans tomatoes, cilantro. Squeeze fresh lime over mix. Add potato mix and chicken. Add Cottage Cheese

  6. Roll mix in tortilla shells and place in glass baking dish.

  7. Cover with enchilada sauce.

  8. Drizzle 1 Tbsp Cheese Sauce over each enchilda.

  9. Bake 30 minutes at 325.

  10. Serving size - 1 Enchilada
