Recipe Ingredients for Southwest chicken chili stew

2 pounds boneless skinless chicken
1 tablespoon chili powder (its sounds like a lot but it isn't)
1 teaspoon ground cumin
1 red bell pepper cut into 3/4" pieces
1 green bell pepper cut into 3/4" pieces
1 large onion cut into 3/4" pieces
3 cloves garlic, minced
1 cup black beans
1 cup kidney beans
1 1/2 cups tomatoes, chopped
3/4 cup prepared salsa or picante sauce
1 salt to taste
1 cup zucchini, chopped
1/2 cup grated carrots
1/2 cup purple cabbage, chopped

Recipe Directions for Southwest chicken chili stew

Place chicken in slow cooker. Sprinkle chili powder and cumin over the chicken, toss to coat. Add bell peppers, onion, garlic, beans, tomatoes and salsa. Mix well. Cover and cook on low 5 hours or until turkey is no longer pink in center and vegetables are crisp-tender. Ladle into bowls and garnish with cilantro, if desired.
