Southwest style chicken and beans, with tomatoes, onions and spices. A filling low cal, low fat main dish. This recipe serves 4 medium size portions, or 2, 2.5ish large portions.

Recipe Ingredients for Southwest Chicken and Beans

1 serving full can of red kidney beans
1 small Onions
6 oz Perdue Fit and Easy Chicken Tenderloins
1 medium whole (2-3/5" dia) Tomatoes, Red, Ripe
2 tbsp Olive Oil
1/2 serving sliced canned jalapenos
2 tbsp All Natural Medium Salsa
1/2 NLEA serving Limes
1/2 tsp Garlic Powder
1 tsp Chili Powder

Recipe Directions for Southwest Chicken and Beans

  1. Sauté chopped small onion in 1tbsp extra virgin olive oil till they begin to soften.

  2. Drain and rinse 1 can red kidney beans and then toss them in with your onions and cook for about 4 minutes on low medium heat.

  3. Add to the mixture 1 chopped medium tomato, 2 tbsp salsa, 1 tsp chili power, 1/2 tsp of garlic powder, 4 or 5 small slices of canned jalapenos & juice from half a lime. Stir and let that cook for another 4 minutes with your pan covered or until everything is thoroughly heated and softened.

  4. Push aside the vegi mix in your pan to one side. In the empty side, add 1tbsp of olive oil for the chicken to sauté in. Add 1/2 pound of chopped chicken tenderloins and cook on low to medium heat uncovered till chicken is cooked through.

  5. Stir together the chicken and vegetable mixture and serve.

  6. Tasty as is, or you can top it off by adding low fat sour cream or cheese for more flavor and dairy nutrients. This dish pairs nicely with rice, or tortilla chips.
