This has the flavour of a chicken chili but the consistency of a soup. You can make your own nacho chips to serve alongside by cutting whole-wheat pitas into 8 wedges each and toasting them on a baking sheet in a 400 F oven for 10 minutes.

Recipe Ingredients for Southwest Chicken and Bean Soup

1 tsp canola oil
1 onion, finely chopped
2 cloves garlic, minced
2 tsp chili powder
1/2 tsp paprika
1/2 tsp ground cumin
6 cups (Campbell's) Low Sodium Chicken Broth
398 ml stewed tomatoes
1 red bell pepper, diced
1 green bell pepper, diced
12 oz boneless chicken, finely chopped
425 g red kidney beans, drained and rinsed
2 tbsp chopped fresh cilantro
2 tbsp fresh lime juice

Recipe Directions for Southwest Chicken and Bean Soup

  1. Heat the oil in a soup pot over medium heat. Add the onion, garlic, shili powder, paprika and cumin and cook until the onion has softened, about 5 minutes.

  2. Add the chicken broth, tomatoes and red and green peppers, and bring to a boil. Reduce the heat to a gentle boil and add the chicken and beans. Cook, stirring, for about 8 minutes or until the chicken is no longer pink inside. Add the cilantro and lime juice before serving.
