Recipe Ingredients for Southwest Chicken and Barley Soup

2 cups chicken breast, cooked
1 c chopped celery
3/4 c carrots, chopped
1/2 c onion
64 oz chicken broth, organic
1 c water
15 oz kuners black beans, unsalted
10 oz diced tomatoes
4 oz jalapenos, chopped
4 oz mild green chilies
1 1/2 c corn, frozen
2 tsp parsley flakes, dried
1 tsp garlic powder
1 tsp basil, dried
1 tsp cumin, ground
1 tsp coriander, ground
1/2 c barley, organic
4 oz Cheese

Recipe Directions for Southwest Chicken and Barley Soup

  1. Cook chicken over medium heat until juices are gone, set aside.

  2. In a large pot pour chicken broth, water, beans, tomatoes, corn, celery, carrot, chicken and seasonings. Bring to a boil. Reduce heat and simmer, uncovered for 15 minutes.
