Recipe Ingredients for Southwest Chicken Barbecue Salad

1 lb chicken breast
4 cups baby spinach
16 oz corn, canned
16 oz black beans, canned
1/2 cup barbecue sauce
1/2 cup jicama
1/2 cup cilantro
2 tomatoes
1/4 cup light ranch dressing

Recipe Directions for Southwest Chicken Barbecue Salad

  1. Spray large skillet with cooking spray and place on high heat. Add whole chicken breasts. Fry for 10 minutes, flip over and cook for 5 more minutes. Add barbecue sauce to top of chicken and cook for 5 more minutes.

  2. While chicken is cooking place 1/4 of each of the vegitables on a plate. Top with drained corn and black beans.

  3. When chicken is done slice in 1/2 slices and place on top of salad. Top with ranch dressing.
