Recipe Ingredients for Southwest Breakfast Cups

3 cups brown rice
5/8 cups southwestern egg beaters
1 large tomato, diced
1/4 cup red onion, diced
1/4 cup yellow pepper, diced
1/3 cup skim milk
4 oz mexican cheese, shredded
1/2 tsp black pepper
1/2 tsp cumin

Recipe Directions for Southwest Breakfast Cups

  1. mix all ingredients.

  2. cook at 400 for 15min. in muffin pans.

  3. freeze individual servings and reheat in microwave for approx 1min.
