A quick and esy Southwestern-inspired vegetarian and vegan bean salad.

Recipe Ingredients for Southwest Bean Salad

3 cups black beans
1 1/2 cup corn
1 red bell pepper
1 avocado
3 plum tomatoes
4 green onions
1/3 cup cilantro
1/3 cup lime juice
1/3 cup olive oil
1 dash salt
1/8 tsp cayenne pepper
1/8 tsp cumin

Recipe Directions for Southwest Bean Salad

  1. In a large mixing bowl, combine the beans, corn, bellpeper, avocado, tomotes, onion, and cilantro.

  2. Gently toss.

  3. Whisk together the remaining ingrediants, then pour over the bean mixture and gently combine. Chill for at least an hour to allow flavors to mingle.
