Recipe Ingredients for Southwest Bean Salad

2 tblsp lime juice
1 tblsp olive oil
1 tsp ground cumin
1/4 tsp black pepper
1 tsp salt
15 ounce red beans, rinsed and drained
15 ounce black beans, rinsed and drained
10 ounce frozen corn, thawed
4 tomatoes
1 jalapeno pepper
1/2 cup onion
1/3 cup fresh cilantro

Recipe Directions for Southwest Bean Salad

Whisk lime juice, olive oil, cumin, salt and pepper. Set aside. In a bowl combine beans, corn, diced tomatoes, diced jalapeno, diced onions and chopped cilantro. Add lime juice dressing and mix well. Refrigerate for several hours and enjoy!
