Recipe Ingredients for Southwest Barbecue Turkey Mini-Meatloaves

1 lb ground turkey breast
1 egg
1/3 cup bread crumbs
1/2 c red onion, finely chopped
1 tsp cumin
1/2 tsp chili powder
4 tbsp 2% sharp cheddar cheese, shredded
6 tbsp sweet baby ray's barbecue sauce

Recipe Directions for Southwest Barbecue Turkey Mini-Meatloaves

  1. Preheat oven to 400

  2. Combine and mix together ground turkey, egg, bread crumbs, onion, cumin, chili powder and 2 tbsp of barbecue sauce

  3. Divide mixture into 4 equal portions

  4. Spray mini-loaf pans with non-stick spray

  5. Place each fourth of mixture into a loaf pan

  6. Make a 2-inch trench in the center of each meatloaf

  7. Stuff each trench with 1 tbsp of the shredded cheese and then pinch the meat back over it

  8. Spread 1 tbsp of barbecue sauce over the top of each loaf

  9. Bake for 40 minutes
