I use a box of corn muffin mix in place of flour and meal for ease, but be warned that this will add 2 grams of fat per serving, and some pre-made corn muffin mixes also contain lard. if you use just meal and flour, add an extra tablespoon of oil. This is a cake-like sweet-savory recipe to be served as a side dish, or bake in a larger pan for crispier results and serve with natural honey for a desert (makes 16 dessert servings). the edges are drier and more like cake, while the center is a bit moister, like wet brownies. Great as a treat side dish for much lighter dishes (like veggie fajitas!).

Recipe Ingredients for Southern Sweet Corn Cake

150 g white flour
100 grams yellow cornmeal
2 cups Whole Kernel Corn
2 cups Creamed Corn
1/4 cup canola oil
1/2 cup fat-free sour cream
2 eggs

Recipe Directions for Southern Sweet Corn Cake

  1. Pour all ingredients into mixing bowl. Mix with a fork until throughly combined.

  2. Pour into 8x8 pan sprayed with non-stick spray.

  3. Bake at 350 until top is brown.
