Recipe Ingredients for Southern Style Slow Cooker Chicken and Grits

1 3/4 cup fat free chicken broth
6 tbsp Corn Grits
1 tbsp extra virgin olive oil
1 small vidalia onion, diced
1 clove garlic, minced
8 oz button mushrooms, sliced
1 pepper jalapeno
1 medium red pepper, chopped
14 oz canned diced tomatoes, fire roasted variety
1/4 tsp ground cumin
1/2 tsp kosher salt
1/4 tsp ground black pepper
1 pound boneless skinless chicken breast, cubed

Recipe Directions for Southern Style Slow Cooker Chicken and Grits

  1. Place broth in a 3- to 5-quart slow cooker. Slowly add grits, stirring constantly to avoid lumps. Set aside.

  2. Heat EVOO in a large skillet over medium-high heat. Add onion, garlic, mushrooms, jalapeno and red pepper. Saute, stirring frequently, for about 5 minutes. Add vegetables to slow cooker. Place tomatoes, cumin, salt and pepper to slow cooker. Stir to mix. Add chicken, cover and cook at medium for 5-6 hours. If your cooker doesn't have a medium, cook on high for 3-4 hours or low 7-8 hours. Yields about 1 1/2 cups per serving.
