Recipe Ingredients for Southern Style Green Beans

2 lbs green beans
1 medium onion, chopped
2 1/4 oz bacon (6 oz or 1/2 package raw)

Recipe Directions for Southern Style Green Beans

  1. Wash and snap the green beans. Set aside.

  2. Cook the bacon about halfway in a frying pan. Remove the bacon from the pan and set aside. Add onions to the pan and saute in the bacon fat for about 3 minutes, until slightly soft.

  3. While the onions are cooking, chop the bacon into small pieces. When the onions are done, combine all ingredients in a saute pan or stock pot and add enough water to cover. Simmer over medium low heat until the green beans are soft. This can take several hours (2 -4).

  4. It is nearly impossible to overcook the beans. If you don't have time to let them sit, you can increase the cooking temperature and decrease the cooking time. But they're best slow-cooked.
