A quick version of the southern classic, from Cook's Country magazine. Given that the beans are cooked in bacon grease, this is not something to be eaten regularly. Nor does the nutritional breakdown appear accurate, as it is assumed that the fat would be drained for the bacon fat values. But the dish is delicious and worth serving on special occasions.

Recipe Ingredients for Southern-Style Green Beans

4 bacon slices, thick-cut , plus 2 additional slices
1 onion, chopped fine
2 lbs green beans, trimmed and halved
1 cup chicken broth, low sodium
2 tbsp cider vinegar
1 tbsp brown sugar
1 tsp thyme, fresh minced

Recipe Directions for Southern-Style Green Beans

  1. Cook the 6 slices of bacon in a large skillet over medium heat until crisp, about 8 minutes. Transfer 4 of the slices to a paper towel-lined plate; when cool enough to handle, crumble bacon and reserve.

  2. Add chopped onion to pan with the remaining slices bacon and cook, stirring frequently, until golden brown, about 8 minutes. Add beans, broth, 1 tablespoon of the vinegar, sugar, thyme, 1/4 teaspoon salt and 1/4 teaspoon pepper. Bring to boil, then reduce heat to medium-low and cook, covered, until beans are tender, about 12 minutes.

  3. uncover skillet and discard the bacon slices. Increase heat to medium-high and cook until liquid evaporates, 3 to 5 minutes. Off heat, stir in remaining vinegar and crumbled bacon. Season with salt and pepper to taste. Serve.
