Southern Pecan Pie Recipe

Recipe Ingredients for Southern Pecan Pie

5 T unsalted butter
3 T shortening
1 1/3 c flour
1 T sugar
1/4 t salt
4 T ice water
3 eggs
1/2 c sugar
1 c dark corn syrup
1 t vanilla extract
1/4 c unsalted butter, melted
1 1/2 c pecan pieces

Recipe Directions for Southern Pecan Pie

  1. In the food processor, combine the flour, sugar & salt. Pulse 2 or 3 times to mix. Add cold butter & shortening pieces & pulse 8 to 10 times until mixture forms large coarse crumbs the size of large peas. Add the ice water a little at a time & pulse 10 to 12 times just until the dough begins to come together in a mass but does not form a ball. Transfer the dough to a work surface & shape the dough into a 6-inch disk. Wrap tightly in plastic wrap & refrigerate until well chilled, about 1 hour or for up to overnight. Roll out dough, line pan with crust & freeze until firm, at least 30 minutes. Line the frozen pie crust with heavy duty foil, fill with beans or rice & bake until it dries out, about 15 minutes. Pull up on the corner of the foil. If it sticks, return to oven & check every 2 minutes. Carefully remove the weights & foil. Reduce the oven to 350 degrees & bake 5 minutes longer or until crust is lightly brown & dry looking on the bottom.

  2. Position a rack in the middle of the oven, & preheat to 350 degrees. To make the filling, in a large bowl, combine the eggs, sugar, corn syrup, & vanilla. Whisk until blended, then whisk in the melted butter. Using spoon, stir in the pecans. Pour the filling into the prebaked crust. Bake the pie until the filling is set 45-50 minutes. The center of the pie should jiggle slightly if the pan is given a gentle shake. Transfer to a wire rack & let cool. Serve warm or at room temperature, topped with whipped cream, if desired. The pie can be covered with plastic wrap & stored at room temperature for up to 2 days.
