I discovered this treat while living on a very tight budget, it is kind to both your wallet and your waistline. It is easy and delicious. Dark leafy greens are smothered in a deceptively rich (but surprisingly low calorie) mashed potato and shallot sauce. An incredibly satisfying dish full of vitamins and flavor that will keep you full for several hours.

Recipe Ingredients for Southern Greens and Hot Mashed Potato Salad

1 cup collard greens
1 cup mustard greens
1 cup potatoes
1 cup chicken broth
2 tbsp shallots
1 tbsp half and half
1 tbsp smart balance light
1 tsp soy sauce

Recipe Directions for Southern Greens and Hot Mashed Potato Salad

  1. place the 2 cups of leafy greens in a steamer and steam until slightly soft but not soggy (about 7-10 minutes)

  2. chop the potatoes into 1/4in cubes and boil until tender (about 15 minutes) if you have a steamer pot boil the potatoes under the leafy greens.

  3. mash the potatoes in a bowl with a pastry cutter

  4. melt the butter in a frying pan

  5. dice the shallots very finely and add to the frying pan, cook until just they get just tiny bit brownish

  6. add the chicken broth to the frying pan and cook on high until it is about halfway reduced and becoming slightly thick

  7. add the half and half, stir for 15 seconds

  8. remove from heat

  9. pour the sauce onto the mashed potatoes in the bowl

  10. add the leafy greens and mix thoroughly

  11. add the soy sauce if you want the flavor to be more salty, mix to combine

  12. enjoy out of a large bowl with a spoon
