Cornbread made in 6 inch cast iron skillet.

Recipe Ingredients for Southern Corn Bread

1 cup corn meal
3/4 cup buttermilk
1/3 cup boiling water
1 egg
1 tsp. baking powder
1/2 tsp. salt
1/4 tsp. baking soda
20 g bacon

Recipe Directions for Southern Corn Bread

  1. Mix 1/3 cup cornmeal with 1/3 cup boiling water to make mush. Add buttermilk and beaten egg

  2. Mix remaining cornmeal, baking powder, salt and baking soda.

  3. Place bacon in 6 inch skillet in oven and preheat to 450 degrees. When preheated set aside bacon and retain fat.

  4. Mix wet and dry ingredients with 4 tsp. of retained bacon fat. pour into heated skillet.

  5. Bake in 450 degree oven 25 minutes. Turn out immediately to cooling rack.
