Yummy casserole for your chicken leftovers. You'd never know that it is a diet dish. Very, very satisfying!

Recipe Ingredients for Southern Chicken, Macaroni and Cheese Bake

5 oz macaroni, dry, enriched
2 tbsp I can't believe it's not butter
3 tbsp flour, all purpose
1 cup chicken broth
1 1/2 cups peas and carrots - frozen, cooked, boiled, drained, with salt
1 cup chicken, meat only, roast
3 oz Kraft fat free shredded cheese
2 slices, (Wonder)light white
1/2 cup whole milk

Recipe Directions for Southern Chicken, Macaroni and Cheese Bake

  1. Boil the macaroni (I use elbows or shells) in salted water according to package directions. If it is easier to measure once cooked, it comes to 3.5 cups cooked.

  2. In a saucepan over medium low heat, melt "I Can't Believe it's not Butter"; add flour. Cook, stirring, until flour mixture is well blended and bubbly.

  3. Gradually stir in chicken broth and milk. Stir in cheese until melted and smooth. Add pepper, to taste, along with fresh parsley (optional). Cook, stirring, until thickened. Add the chicken and vegetables; cook for about 1 minute longer.

  4. Combine the sauce with cooked and drained macaroni; pour into a 2-quart casserole, (spray casserole dish with Pam first). Toss bread crumbs with a couple of squirts of "I Can't Believe It's Not Butter Spray) and sprinkle over the casserole. Bake at 350 for about 25 minutes, until bubbly and browned. Makes 4 servings.
