South Western Chicken Salad with sweet chipotle vinaigrette and corn pepper relish.

Recipe Ingredients for South Western Salad with Grilled Chicken

12 oz. Boneless Chicken Breast
2 tbsp. Soy Sauce
1/2 cup pineapple juice
1 cup grated Monterey jack cheese
1 cup grated cheddar cheese
1/4 cup tomato
1 head romaine lettuce

Vinaigrette:
1 1/2 tsp yellow onion
1 1/2 tsp garlic
2 tsp dijon mustard
2 pinches cumin powder
1/4 cup tomatoes
1 tbsp cilantro
3 tbsp seasoned rice wine vinegar
1 pinch ground black pepper
2 pinches salt
1 tsp chipotle chile
2 tbsp honey
1/3 cup canola oil

Relish:
3/4 cup sweet corn
1/3 cup red bell peppers
1/4 cup red onion
1 tbsp cilantro
1/3 cup black beans
2 tsp fresh lime juice
1 pinch white pepper
1/2 tsp salt

Recipe Directions for South Western Salad with Grilled Chicken

  1. CORN & PEPPER RELISH: In a mixing bowl combine all ingredients for the Corn & Pepper

  2. relish. TASTE & adjust seasonings. Store in plastic container covered with plastic wrap.

  3. SWEET CHIPOTLE VINAIGRETTE: In a blender, combine all ingredients EXCEPT for the oil.

  4. Add oil SLOWLY, while blender is running on high speed. TASTE & adjust seasonings.

  5. GRILLED CHICKEN: Remove skin. Grill on the char broiler. Cut into it and make sure it?s

  6. cooked all the way. Thinly slice chicken on a diagonal into slices 1⁄2 ? wide x 3? long.

  7. ASSEMBLING SALAD: In a mixing bowl, with tongs, toss romaine with enough dressing to coat each piece of lettuce. WARNING: No dressing should be on the bottom of the bowl! Lettuce should not be soaking with dressing. DO NOT OVER DRESS OR UNDER DRESS!

  8. Add tortilla strips and toss again.

  9. Pile high onto large plates. Should resemble a volcano!

  10. Arrange chicken slices ?fanned out? on top of salad
