Recipe Ingredients for South Western Black Bean Salad - ONLY 7 WW Points!

3/4 cup black beans
3/4 cups frozen corn
1 small tomato
1/2 avocado
1/4 cup red onion
1 1/2 tbsp lime juice
1 1/2 tbsp extra virgin olive oil
1/2 tbsp dried cilantro
1/8 tsp fresh ground black pepper

Recipe Directions for South Western Black Bean Salad - ONLY 7 WW Points!

  1. Thaw corn (rince in room temp. to warm water) combine all ingredients except avocado. Marinate in the refrigerator 30 minutes (optional).

  2. Add avocado before serving.
