Healthy vegetable curry with white coconut based suace.

Recipe Ingredients for South Indian Vegetable curry

100 g aubergine
100 g carrot
100 g green beans
100 g potato
100 g peas
50 g shredded coconut
4 green chili peppers
1 tsp salt
3 medium tomatoes
1 tbsp natural yoghurt
1 tsp garam masala
2 tsp fresh coriander

Recipe Directions for South Indian Vegetable curry

  1. 1. Place aubergine, potato, green beans and carrots in a pan, add 250ml of water and bring to the boil.

  2. 2. Add peas and cover for 4 minutes until all vegetables are tender.

  3. 3. Blend, poppies, chili's and coconut with 150ml of water and add to the vegetables, stir and simmer for 5 minutes.

  4. 4. Add the tomatoes, yoghurt and garam masala simmer for 2/3 minutes.

  5. 5. Serve sprinkled with fresh coriander leaves.
