Recipe Ingredients for South Indian Lentils and Vegetables

2 tbsp olive oil
1 tsp mustard seeds
1 tsp cumin seeds
2 cloves garlic, crushed
2 tbsp coconut, shredded
1 cup red lentils
1/2 tsp turmeric
2 cups water
2 cups broccoli, chopped
1 cup cauliflower, chopped
2 cups garbanzo beans

Recipe Directions for South Indian Lentils and Vegetables

  1. Heat oil in heay saucepan, fry mustard seeds, cumin, garlic, coconut, add 1 tsp curry. fry until coconut browns. mix in the lentils, 2 tsp garam masala, turmeric and water.

  2. Simmer until the lentils are mushy. add the vegtables, and cook until crunchy.

  3. add salt to taste.
