3 serving Kirkland Olive oil - 1 tbsp
4 cup (1" cubes) Eggplant
1 serving Black Mustard Seed
1 tsp Salt, Table
10 teaspoon Madras Curry Powder

Recipe Directions for South Indian Eggplant Curry

Heat Olive oil add mustard seed and splatter. Add eggplant, salt and saute until tender. Add curry powder and saute for 3 minutes. Serve and enjoy
