Add varied colored peppers for a confetti look! Make as hot as you like.

Recipe Ingredients for South of the Border Potato Salad

1/3 cup oil, vegetable
1/4 cup vinegar, cider
1 1/2 tsp. chili powder
1 tsp. salt
1 dash Tabasco
1 small red onion
8 oz. corn, canned, whole, drained
1/2 cup carrot, shredded
1/2 cup green pepper, diced
1/2 cup black olives, sliced
4 cups red potato, boiled, diced

Recipe Directions for South of the Border Potato Salad

  1. Cook whole potatoes until tender. Dice.

  2. Combine first five items and add to warm potatoes, and gently mix until coated. Cover and chill one hour.

  3. Fold in veggies and serve.
