Recipe Ingredients for South of the Border Chicken Stew

8 oz (raw) Chicken
1 tbsp Olive Oil
1 cup, chopped Onions
1 cup chopped Green Bell Pepper
1 cup, diced Celery
3 cloves Garlic
2 tbsp Tomato Paste
1/4 tsp Sea Salt

Recipe Directions for South of the Border Chicken Stew

  1. 1. Cut the Chicken into chunks and season lightly with salt and pepper

  2. 2. Heat half the olive oil over medium heat. Lightly brown the chicken, stirring about 5 minutes. Remove the chicken to a bowl.

  3. 3. Reduce the heat and add the other half of the oil , onions, bell peppers, celery and garlic. Cook, stirring 5 minutes. Stir in oregano, and salt and add water. Bring to a simmer and cook 10 minutes.

  4. 4. Stir in the tomato paste and chicken and simmer 10 minutes. Add any spices you want.

  5. 5. Divide the stew in 2, and serve with yogurt and scallions.
