Recipe Ingredients for South of the Border Black Bean and Chicken Soup

3.5 serving Black Beans
3.5 serving Black Beans
3 serving Great Value Chicken Broth (99% Fat Free)
411 grams Tomatoes
15 oz Chicken
3 oz Carrots
2 medium Squash, Summer, Zucchini, Includes Skin
3.5 serving No Salt Added Golden Sweet Whole Kernel Corn

Recipe Directions for South of the Border Black Bean and Chicken Soup

  1. Place 3 cups of chicken broth and 3 cups of water in a large soup pot and set to medium high heat

  2. Cut two chicken breasts (skinned and boned) into chunks and add to broth

  3. Chop zucchini and carrots (or use shredded carrots) and add to pot

  4. Add poultry seasoning, oregano, pepper, diced garlic (about 1 TBSP) and chili powder (about 2 TBSP) to pot and stir (adding cilantro would be nice too)

  5. Open can of chili ready tomatoes and add to pot, then open, drain and rinse black beans and add to pot and stir

  6. Wait until chicken meat is cooked thoroughly and then remove chicken from pot

  7. Use a blender or hand blender to blend remaining ingredients

  8. Add chicken back into pot, drain, rinse corn and add to pot, turn heat down to medium low

  9. Heat for a few additional minutes before serving
