The chips were chopped into a "Meal." Everything, execpt the cheese, was mixed well and separated into two large balls, which were then separated into four baseball size balls. Two of these were flattened into a base for the loaf, then 1/4 cup cheese was placed one each one. Finally the other two were flattened to be a little bit larger than the bottom half, placed on top and tucked underneath.

Recipe Ingredients for South of the Boarder Meatloaf

16 oz Ground Beef
8 oz (Bob Evans) Pork Sauage
4 tbsp chopped Onions
4 oz Peppers, Sweet, Yellow
4 oz Yellow Corn Tortilla Chip
1/2 cup Natural Shredded Cheese

Recipe Directions for South of the Boarder Meatloaf

I used about 1 tbsp of Cillantro stems for flavor. I used a large pinch of cumin, a dask of chile power, and a healthy pinch of hot smoky pepper flacks [I made}, I put the two loaves into a square cake pan [There will be plenty of grease on the bottom.] I then put them into a pre-heated over at 400, after a half hour I turned it down to 300 and cook for another half hour, the outside was very crispy, but not chrunky.
