This is a wonderful dinner when you're doing the South Beach diet. It almost meets those cravings for carbs!

Recipe Ingredients for South Beach Turkey Parmesan

16 oz raw Turkey Breast Cutlet
2 cup Tomato Sauce
0.5 cup Pignoli Nuts
2 oz Grated Parmesan Cheese
0.4 oz Extra Virgin Olive Oil
4 oz Mozzarella, Part Skim Milk Cheese

Recipe Directions for South Beach Turkey Parmesan

  1. Chop pignoli nuts.

  2. Warm sauce in a small saucepan.

  3. Mix together pignoli, Italian seasoning and parmesan on a plate. Coat both sides of cutlet with mixture, pressing to adhere.

  4. Turn oven to a low broil.

  5. Heat oil in a nonstick pan and cook until cutlets approximately 4 minutes per side.

  6. Place cutlets in pan and top with sauce and mozzarella. Broil until cheese just melts.
