Recipe Ingredients for South Beach Stuffed Baked Tomatoes

4 plum tomatoes
1/2 cup Mozzarella, Low Moisture, Part Skim, Shredded
2 tbsp shredded parmesan cheese
1 tbsp dried basil
1/8 tsp salt
1/8 tsp black pepper
1 tsp garlic, minced

Recipe Directions for South Beach Stuffed Baked Tomatoes

  1. Heat oven to 375 F.

  2. Scoop out the inside of each tomato half with a melon baller and roughly chop the scooped pulp.

  3. Combine tomato pulp, mozzarella, basil, Parmesan, garlic, and a pinch of salt and pepper.

  4. Place tomatoes, cut side up, in a muffin pan. Spoon in tomato mixture.

  5. Bake until cheese is melted and lightly browned, about 15 minutes. Serve warm.
