Modified version - I changed it up just a bit to make it more like real potatoes.

Recipe Ingredients for South Beach Mashed Potatoes

1 lb cauliflower, frozen
1 medium vidalia onion
4 cloves garlic
1/4 cup maragarine
1/2 teaspoon sea salt
1/2 teaspoon black pepper
1/2 cup fat free milk
1/2 cup Instant Mashed Potatoes
1/2 teaspoon chives, dried

Recipe Directions for South Beach Mashed Potatoes

  1. Heat butter over medium-high heat until melted

  2. Chop onion and add to pan, saute 1 minute

  3. Add whole garlic to pan saute 30 seconds

  4. Add cauliflower, salt and pepper, saute for 2 minutes

  5. Cover and cook until cauliflower starts to turn golden brown, stir frequently

  6. Remove from heat and transfer to food processor

  7. Add milk and blend until smooth and creamy

  8. Continue blending and slowly add instant potatoes until desired consistancy has been reached.

  9. Remove from food processor and stir in chives

  10. If desired, top with bacon bits and sour cream
